Step 1
Begin by preparing the greens, removing the larger stalks, then cook them in boiling water, seasoned with a teaspoon of salt, for about 12 minutes. Drain and chop the leaves. Set aside.
Step 2
Cook the cod in water for 12 minutes. Drain and separate the cod from the bones. Set cod and some of the cooking water aside.
Step 3
Finely chop the onion and garlic and sauté in a pan with the olive oil for about 3 minutes over a low heat.
Step 4
Add the greens and cod. Mix. Add the black-eyed peas, drained, the breadcrumbs and some of the water used to cook the cod. Cook over a low heat for 10 minutes.
Step 5
Season with the remaining salt and pepper and add the olives. Serve immediately.
