Preparation

Step 1
Preheat the oven to 220 °C.
Step 2
Arrange peppers on a baking tray lined with aluminium. Bake in the oven for 40 minutes, turning occasionally.
Step 3
Wash and dry the sardines well with kitchen paper.
Step 4
Peel the orange, removing the pith, and chop the orange together with a little rosemary, basil and thyme.
Step 5
Add half the salt and two tablespoons of olive oil to the herbs. Brush the bellies of the sardines with some of the mixture. Set aside.
Step 6
Remove the peppers from the oven and seal them in a paper bag.
Step 7
Allow to cool slightly, remove the skin and seeds, and cut the peppers into strips.
Step 8
Place the sardines on a baking tray greased with olive oil and bake for 15 minutes.
Step 9
Serve the sardines with the peppers seasoned with the remaining olive oil and salt.
