Preparation

Step 1
Cut the monkfish into cubes and cook. Set aside the cooking water.
Step 2
In a large pot, sauté the onions, garlic and chopped coriander in olive oil.
Step 3
When the onion is translucent, add the pepper, cut into strips, diced tomato and chopped chilli, mixing the ingredients well.
Step 4
Dilute the tomato pulp in the water used to cook the monkfish and gradually add to the pot.
Step 5
After washing the rice, add it to the pot and season with salt and pepper.
Step 6
Halfway through cooking the rice, add the cooked monkfish and shrimp.
Step 7
Finally, fold in the butter and sprinkle with the chopped mint.
Step 8
Serve your monkfish rice with slices of toasted bread.
