Preparation

Step 1
Heat the milk, sugar, rice and salt in a pot. When it comes to the boil add the lemon peel.
Step 2
Cook over a low heat, stirring occasionally, until the rice is well cooked but still ‘soupy’.
Step 3
Beat the egg yolks in a bowl with a fork and mix in some of the cooked rice. Pour the mixture into the pot and mix.
Step 4
Place on a very low heat and stir for about a minute.
Step 5
Remove from heat and divide into individual bowls or a deep serving dish.
Step 6
Once cold, sprinkle with cinnamon.
